Peaches & Cream Popsicles

On Tuesday night when the house was dark and Ellie was tucked into her bed, I made popsicles. I had been eyeing this recipe for swirled berry yogurt popsicles from Smitten Kitchen, but wanted to make a few modifications.   Peaches were whirred together with honey, and a cinnamon flavored simple syrup was swirled into yogurt. None of the steps were particularly hard, which is critical when your eyes are tired and you’re ready to climb into bed. But, doing the work now will help you reap big rewards tomorrow.

Peaches & Cream Popsicles
I used Smitten Kitchen’s Swirled Berry Yogurt Popsicles as a base, but tweaked the flavors. It worked really well.

Yield: 7-8 popsicles from these molds

Ingredients:
2 c. frozen sliced peaches, thawed
2 tbsp. raw honey (regular would work too)
1 cinnamon stick
1/2 c. water
1/2 c. sugar
1 1/2 c. plain unsweetened Greek-style yogurt

Directions:
Put the cinnamon stick, water and sugar in a saucepan. Cook over medium high heat, stirring until it comes to a boil and the sugar has dissolved. Then, gently simmer for 5 minutes more. Remove the cinnamon stick, and pour your simple syrup into a separte bowl. Place it inside a larger bowl filled with ice and cold water. Let it cool until it is cold to the touch.

While the syrup cools, place the peaches in a large bowl and stir in the honey. Combine until the two are well incorporated. Dump the contents, including any juices, into a food processor and mix until nearly pureed. Set aside.

When the syrup is cool, whisk it into the yogurt.

Now, it’s time to begin creating the popsicles. Begin by adding a little yogurt mixture to each popsicle mold. Then, add some peaches. Repeat until there is 1/4 inch of space left at the top. Use a skewer to lightly swirl the mixtures together.

If you’re using molds like mine, snap on the lid and freeze 3 to 4 hours (or overnight). To remove yours from the mold, run it under hot water to get the popsicle to begin to release. Enjoy with your favorite people.
