Fast Food: Herby Turkey Burgers, Potatoes & Green Beans

This meal is lick your fingers good. It is also incredibly fast and easy to make. It might be the perfect summer meal.

Herby Turkey Burgers
Serves 2 and a toddler

Ingredients:
1/2 lb. ground turkey
1/2 tsp. fresh rosemary, finely chopped
1/2 tsp. fresh thyme, chopped
1-2 tbsp. extra virgin olive oil
1-2 tbsp. coarsely grated Parmigiano-Reggianno
Salt
Freshly cracked black pepper
2 whole wheat hamburger buns
Dijon mustard

Directions:
Mix the turkey, herbs and seasoning together using your hands. Form it into two, large patties and one small one. Make a small indentation in the center of each. Coat each one lightly with evoo.

Preheat a grill or grill pan over high heat. Once hot, add the burgers and sear on one side until golden brown. Flip and do the same on the other side. Turn down the heat to low and tent with aluminum foil. Cook for four minutes and then, turn and cook for four more. Top each with 1 tbsp. cheese. Put the foil back on and melt the cheese. This should take a few minutes.

Remove and serve on sliced wheat buns with a little Dijon mustard.

Herb Roasted Potatoes
Serves 2 and a toddler

Ingredients:
6 Yukon gold potatoes
1 tbsp. rosemary, finely chopped
1/2 to 1 tbsp. thyme, chopped
1 tbsp. extra virgin olive
Salt
Freshly cracked black pepper

Directions:
Preheat the oven to 450 F. Quarter the potatoes lengthwise. Toss in olive oil with the spices and herbs. Roast for 15 minutes and flip. Roast another 15 minutes. Enjoy.

Green Beans with Almonds
Serves 2 and a toddler

Ingredients:
1 bunch of green beans (a cup or two)
2 tbsp. sliced almonds
1 tbsp. extra virgin olive oil
Salt
Freshly cracked black pepper

Directions:
Trim the stems off the green beans. Meanwhile, bring a pot of water to boil. When boiling, salt it. Then, add the green beans. Cook them for about 4 minutes or until fork tender. Drain and set aside. In the pot, add the evoo and sliced almonds. Stir occasionally until light golden. Then, add the green beans and toss. Add salt and pepper to taste.
