Taco nights are kind of a big deal at our house. They take minimal effort and have impressive results.
I’ve pulled recipes for our favorite version, but you can switch it up to match the tastebuds of your family.
These recipes are pretty enough to serve to guests, and the whole thing takes about 30 minutes to put together. I won’t let anyone know how easy it if you won’t.
The Components:
Whole wheat tortillas (store-bought)
Black beans (recipe below)
Toasted corn (recipe below)
Guacamole (recipe below)
Salsa (store-bought)
Turkey (recipe below)
Grape tomatoes, sliced and sprinkled with sea salt and cracked black pepper
Feta (store-bought)
Gameplan
– Mix the spices.
– Prepare the beans.
– Brown the turkey.
– Toast the corn and slice the tomatoes.
– Mix together the guacamole.
– Let everyone layer their own taco. I like mine to start with beans and end with cheese.
Black Beans
Ingredients:
15 oz. can of black beans, rinsed and drained
1 tbsp. butter
Salt and pepper
Heat the beans and butter over medium heat. Once warm, use a masher to smooth them out, leaving a few lumps. Keep warm while you prepare the other ingredients.
Toasted Corn
Ingredients:
1 c. frozen, white corn
Salt Freshly cracked black pepper
In a dry skillet over medium heat, toast the frozen corn until browned and caramelized. Season with salt and pepper.
Ingredients:
1 avocado
Juice from half of a lime
Salt Freshly cracked black pepper
Slice an avocado in half and chop into pieces. Place in a bowl. Squeeze in lime juice and season to taste with salt and pepper. Mash together, adjusting the flavors as needed.
Turkey
Ingredients:
1 lb. ground turkey
1/2 tsp. brown sugar
1 tsp. ancho chili powder
1 tsp. oregano
Stir together the spices in a small bowl. Heat the turkey over medium heat in a non-stick skillet. Season with the spice mixture. Break up the meat and brown it until cooked through.
