Baked Apples for Two (or More)

There’s little better than baked apples. They are the perfect fall dessert. But for some reason, in my head, they always sound like a lot of work. Is it just me?

I thought they would take forever to cook, but when I started figuring out my perfect version, I discovered you can have something really delicious in around 30 minutes, using ingredients that might already be in your kitchen.

This recipe is also incredibly easy to make. So simple in fact, you could make one for yourself to eat while catching up on The Real Housewives. That is, if you’re into that kind of thing.

Baked Apples for Two

Ingredients:

2 apples
1/2 tsp. cinnamon
1/4 c. rolled oats
Dash of vanilla
1/2 tsp. sugar
Pinch of salt
1 tsp. butter

Directions:

Preheat the oven to 350 F.

Stir together the oatmeal, cinnamon, sugar and a pinch of salt.

Peel the apples and core them. Granny Smith or Golden Delicious would work well. I don’t have a corer or the right skills, so I actually cut mine in half and then, used a paring knife to remove the core. If you use this method, put two apple halves in each ramekin.

Fill the apples with oats, top with a dash of vanilla and a small pat of butter. Put the ramekins on a sheet pan and bake them for around 30 minutes.
