My dad is a bit of a cookie monster. There are many shameless stories about his love of cookies dating back to when he was a little boy. His favorites are chocolate chip, but there are times when he requests snickerdoodles from my mom. This is her recipe. To this day, snickerdoodles are still some of my favorite cookies. Piled on a small plate they’d make a nice treat for Santa or any special elves in your life.
Snickerdoodles
Makes about 4 dozen cookies
Ingredients:
1/4 c. unsalted butter
3/4 c. butter flavored shortening
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. soda
1/4 tsp. salt
Cinnamon Sugar Mixture
2 tbsp. cinnamon
4 tbsp. sugar
Preheat the oven to 400 degrees. Next, mix the shortening, butter, sugar and eggs thoroughly. In a separate bowl, whisk together the dry ingredients. Add them to the butter mixture a little at a time until evenly combined.
Mix together the cinnamon and sugar on a plate or shallow bowl. Roll the dough into small balls (about 1 tbsp.) and then, coat them in the cinnamon sugar. Place them two inches apart on an ungreased baking sheet. Bake for 8 to 10 minutes or until just lightly browned on the bottom.
