Summer Wishlist

Summer officially starts this week, and I can’t wait for long days, flip flops and time outside with friends. Here’s my new wishlist, but with a summer spin.

  1. Try my hand at canning. I’ve picked up a few books on this, Tart & Sweet and Jam It, Pickle It, Cure It: And Other Cooking Projects, but have been too nervous to try it so far.
  2. Make a batch of popsicles, using these.
  3. Eat lots of plums, peaches and nectarines.
  4. Dine on egg sandwiches with fresh tomatoes and this basil mayo.
  5. Harvest vegetables from my garden.
  6. Decorate my toes with shockingly bright polish.
  7. Treat myself to a summer blockbuster on a weekday afternoon.
  8. Work on my tan. (I could pass for Edward Cullen’s sister right now.)
  9. Try to bring back the spritzer.
  10. Find some new jewels to perk up my summer basics and a cute hat that fits my big head. (I’m not fishing for compliments. My head is very round, which makes it hard to find hats that fit.)
  11. Take a trip or two.
  12. Perfect my BBQ skills.
  13. Go to a few concerts.
  14. Read.
  15. Declutter my closet and our storage room.

    If you (and Keegan) like bread & butter pickles, I would love to share a family recipe with you. Let me know and I’ll post it for you, otherwise, I won’t bore you with it! It’s easy, do it in the microwave and then store in your fridge. No processing necessary! 🙂

  2. Finally, I remembered to get out this recipe – might be too late to get many cucumbers this year, but maybe next year! 🙂

    Microwave Bread & Butter Pickles

    4 cucumbers, sliced thin (can use more if small cucumbers, actually I like small ones better, less seedy)
    1-2 onions, sliced thin, separate rings (I like to use purple onions)

    Brine:
    1/2 tsp salt
    1/4 tsp tumeric
    1/4 tsp mustard seed
    1/4 tsp celery seed
    1/2 cup vinegar (I use apple cider vinegar, but you can experiment!)
    1 cup sugar

    In a glass bowl, pour brine over cukes & onion. (my mom always said cukes in recipes, thought I’d share that!) 🙂
    Microwave for 5 minutes on high. Stir well, microwave 5 more minutes on high. Let cool, put into quart jars or smaller if you are giving some away. Put into fridge – will keep at least 1 month, if they last that long! Enjoy!
