15 Minute Main Dish: Smoked Paprika Chicken Thighs

This recipe is a family favorite. Smoky and addictive, these thighs have Ellie eating chicken. CHICKEN. The protein she dreads just a little less than fish. (Keegan and I also love it.) No one goes hungry. And, this 15 minute main dish is fast and flavorful.

Smoked paprika, garlic powder and onion powder are rubbed into chicken thighs which have been coated in olive oil. They go into a non-stick pan and in no time, are on your table. You shall not be disappointed. I promise.

15 Minute Main Dish: Smoked Paprika Chicken Thighs

Ingredients: 

  • 4 boneless skinless chicken thighs
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1/4 tsp. Kosher salt
  • Pepper
  • 1-2 tbsp. of extra virgin olive oil

Directions: 

Start by stirring together the spices, salt and pepper in a small bowl. Then, rub the boneless chicken thighs with extra virgin olive oil. Now, sprinkle one side of each thigh with some of the spice mixture. Rub it into the chicken thighs. Flip the chicken and repeat on the opposite side.

Next, heat a non-stick pan over medium high heat. Add the chicken. Flip after 4 or 5 minutes. The spices should be a lightly browned, along with the meat. Then, lower the heat to medium low, cover and continue to cook another 4 or 5 minutes or until cooked through. Let rest for a minute or so off the heat while you convince your family it’s time to eat.
