Lemon, Garlic and Thyme Grilled Chicken Thighs

Are you firing up the grill this weekend for the 4th of July too? Well, I’m pleased to report I have something tasty to add alongside your hamburgers and brawts. These lemon, garlic and thyme chicken thighs are simple to make and so good.

Chicken thighs are marinated for about 30 minutes, giving you time to chat or enjoy a cold beverage. Then, they’re popped on a hot grill for about 20 minutes. They go really well with fresh fruit, bare feet and good conversation. Try them and let me know what you think.

Lemon, Garlic and Thyme Grilled Chicken Thighs
Serves 2 1/2 (However, this would be really easy to scale up.)

Ingredients:
1 lemon, sliced
4 sprigs of thyme
1 garlic clove, chopped
1 1/2 lbs. boneless skinless chicken thighs
2 tbsp. extra virgin olive oil
Salt
Freshly cracked black pepper

Directions:
In a ziploc bag, combine the lemon, thyme, garlic, olive oil, salt and pepper. Add the chicken and close the bag. Squish it around a bit. Then, set aside for about 30 minutes.

After the chicken has marinated, heat the grill to high. Place the chicken thighs on the hot grates, leaving the lemon and thyme behind. Grill for about 6 minutes, then, flip. Do the same for another 5 minutes. Then, lower the heat to medium and tent with foil. Let cook for 7 to 10 minutes more, or until cooked through.

Once cooked, remove from the grill and allow them to rest.
