Since December, we’ve been sick on and off at our house. It has not been awesome, and from what I can tell, nearly everyone I know has had some sort of bug lately.
So, today, I wanted to share a very easy oatmeal recipe I made for Ellie when she was starting to feel better. Whenever she’s sick, we keep her diet really plain (cheerios, plain toast, etc.), so as she comes out of an illness, I try to make her something hearty, but not too rich or sweet.
This quick oatmeal is wholesome and delicious. She gobbled it down and so did I. Make it for someone you love. I promise they won’t be disappointed.
Feel Better Soon Banana Oatmeal
Serves 2 greedy people
Ingredients:
2 1/4 c. water
1 c. rolled oats
A pinch of salt
1 banana, mashed
1 tsp. maple syrup
1/2 tsp. cinnamon
1 tsp. vanilla
Directions:
In a saucepan, combine the water, oats and a pinch of salt. Bring to a boil over high heat. When boiling, reduce to low and cook until the water is absorbed and the oats are tender – about 6 minutes.
While the oats are cooking, mash the banana. Then, when the oats are tender, add the maple syrup, mashed banana, cinnamon and vanilla off the heat. Stir and enjoy!
