These almonds are addictive and deceptively easy. They are also ready in less than 15 minutes and require zero chopping. I think I just found your new go-to snack.
These would also be great to serve the next time you have friends over. Or, you can just eat them out of your cabinet, like I did every time I passed my kitchen…….Either way.
Almonds To-Go
Ingredients:
2 tbsp. extra virgin olive oil
1 whole garlic clove
2 sprigs fresh thyme
1 sprig rosemary
1 c. whole almonds (raw)
Salt and pepper, to taste
Directions:
In a small pan, heat the extra virgin olive oil over medium heat. When warm, add the garlic, thyme and rosemary sprigs. Turn to low if it starts to spit at you. After about 3 minutes or when you can smell the garlic, add the almonds, salt and pepper. Stir to combine. If you’ve lowered the heat, raise it to medium now. Once toasted and golden, remove from the skillet using a slotted spoon. (This took about 6 minutes for me. Watch yours closely. You don’t want to burn them.) Leave the garlic clove and herb sprigs behind. Season to taste with a little salt and serve.
