Fast Food: Grilled Chicken with Strawberry Salsa & Roasted Carrots

On busy weeknights, getting dinner on the table has to happen fast, so I’m back with another edition of my Fast Food series. This whole meal can be made in around 30 minutes and tastes like the start of summer.

The bright strawberry salsa is spicy, sweet and tangy. Spooned over perfectly grilled chicken, it is a treat. Roasted carrots are tender and crisp. To round it out, I warmed up frozen corn. This lovely spring dinner is so nice that it may have you thinking it’s Friday.

Because Ellie is two and suspicious of anything spicy, I sliced up plain strawberries for her to eat instead of the salsa. She couldn’t have been happier.

Grilled Chicken with Strawberry Salsa & Roasted Carrots
Serves 2 plus a toddler

Ingredients:
10 carrots
3 tbsp. extra virgin olive oil, divided
Lime
1 tsp. raw honey
1 tbsp. red onion, finely chopped
1/4 of a jalapeno, finely chopped (ribs and seeds removed)
1/2 c. finely chopped strawberries
2 chicken breasts
Salt
Freshly cracked black pepper

Directions:
Preheat the oven to 400 F. Peel the carrots and cut into 1 inch pieces. Toss them with 1 tbsp. extra virgin olive, salt and freshly cracked black pepper.

Squeeze the juice from one lime into a bowl. Whisk with 1 tsp. of raw honey until combined. Add the red onion. Then, the jalapeno, strawberries and a pinch of salt goes in the bowl. Stir together and then, set aside.

When the oven has finished pre-heating, add the carrots to the oven. Roast for 10 minutes. Then, flip and cook for 10 minutes more.

Pound the chicken breasts until they are evenly a half inch thick. Heat a grill pan over medium heat. Season the chicken with salt and pepper. Toss in 2 tbsp. extra virgin olive oil. Place the chicken on the pan. Squeeze a bit of lime juice over both. After about 5 minutes, flip. It should be a light golden brown. Then, cook on the remaining side for 4 to 5 minutes until cooked through.

Top each piece with a bit salsa. Then, serve with carrots.
