A New Spin on Zucchini

This side has been in permanent rotation at our house. When summer hits, zucchini and summer squash are constants on our dinner table. Economical and easy to make, I can’t get enough of them. With soy sauce and sesame oil, zucchini takes on a buttery, perfectly spiced flavor that goes as well with grilled pork chops, as it would hamburgers. Try it this week. You won’t be disappointed.

Asian-ish Zucchini

Ingredients:
1 zucchini
1 garlic clove, minced
1 tbsp. evoo
1-2 tbsp. soy sauce
A dash of sesame oil

Start by quartering the zucchini and slicing it into half moons.

Heat evoo over medium low heat. Add the minced garlic, and stir for 30 seconds. Next, add the zucchini, soy sauce and sesame oil.

Season with salt and pepper to taste.

Stir occasionally until softened.

    1. It would be perfect with fried rice. We’ve been having it with chicken teriyaki lately.
