Miss Megan asked me to come up with a cocktail recipe for her blog, Crazybananas. She was thinking watermelon and lime, so I came up with a couple of options. We had a lot of fun testing both and discussing world issues. (Okay, we may have been gossiping.)
You’ll find our favorite recipe on her blog, a Vodka Limeade with Watermelon Ice Cubes, which is pretty delicious. The watermelon ice cubes are so fun and would be great in a non-alcoholic version if that’s your thing. I think kids would love them in lemonade.
Although the Vodka Limeade was our favorite drink, it didn’t seem right to keep the second recipe to ourselves, because it was also pretty tasty. This one uses the same ingredients, but in a different way. So, you could also try both this weekend and choose your own favorite. No judgement here.
Watermelon & Lime Cocktail
Serves 4
3 cups of cubed watermelon
1 c. sugar
1 c. water
2 sprigs of mint
2 c. lime Perrier
2 jiggers vodka
In a blender, puree the cubed watermelon until smooth. Meanwhile, combine 1 c. water with 1 c. sugar in a small saucepan over medium low heat until dissolved. Remove from the heat and add the mint. Let it steep for several minutes. When it has cooled, add 1 c. of the simple syrup to the watermelon. You can add more or less depending on how sweet your watermelon is. Ours wasn’t very sweet, so we added the full cup, so definitely taste this as you go. Next, stir in 2 c. lime Perrier and 2 jiggers of vodka. Feel free to adjust all of these measurements to suit your tastes. Then, serve over ice and enjoy.
