You might think, because I post elaborate dinners here, that I never tire of cooking. But, the fact is I burn out sometimes and don’t always feel like making dinner. This has been one of those weeks. On Sunday, I tried to make Gwyneth’s crab cake burgers and didn’t realize they needed to chill at least two hours before frying, so we got Pei Wei. Then, last night, I had a haircut that ran really late, so instead of this salad, we had Goodcents.

This week, I’ve been thinking a lot about quick and healthy options to get on the table. There are a few products that I rely on during the week when I have just a little more than no time.  They’re delicious and super easy.

The first item I like to eat for lunch, but you could do this for dinner with a salad, fruit or frozen veggies.

I’ve been holding out on you on this last one. I like to make these for a weekend breakfast or dinner at home. They’re great with some scrambled eggs, one of my go-to quick fix meals. Sometimes, I warm up fruit jam and spoon it over these. Or, try stacking them with yogurt and fresh berries. It’s really yummy.
